Carrots and Chia Cake


INGREDIENTS:

  • 5 TBSP CHIA SEEDS

  • 360 ML MILK OF YOUR CHOICE (ALMOND, COCONUT, SOYA ) UNSWEETENED

  • 2 TSP VANILLA EXTRACT

  • 1 TSP GROUND CINNAMON

  • 1 TSP GROUND GINGER

  • 1/2 TSP NUTMEG

  • 1/2 TSP MIXED SPICE

  • 110 GR GRATED CARROTS

  • 200 GR GREEK YOGHURT

  • 60 GR CHOPPED WALNUTS OR PECAN


DIRECTIONS:

1. Place Chia Seeds, spices and milk into a bowl. Stir thoroughly to combine and place in the fridge for at least 30 minutes to soak.

2. After 30 minutes make sure the seeds have absorbed most of the liquid, remove from the fridge and stir in the yoghurt and grated carrots

3. Split the chopped nuts between 4 glasses and pour the chia mix on top. Add and extra sprinkling of nuts and grated carrot to serve.
