Citrus Prawns with Quinoa

INGREDIENTS:

  • 1 CUP QUINOA COOKED

  • ½ TBSP EXTRA VIRGIN OLIVE OIL

  • ½ TBSP FRESH LEMON JUICE

  • ½ TBSP LIME ZEST

  • ½ TBSP FRESH PARSLEY, CHOPPED

  • CRUSHED RED CHILLS

  • FRESHLY GROUND PEPPER


DIRECTIONS:

  1. Cook quinoa. In a medium-size frying pan, sauté extra virgin olive oil with lemon and lime juices for 2 minutes, stirring constantly.

  2. Add prawns; cook 3-4 minutes. Turn prawns, top with lime and lemon zest, parsley and chilis.

  3. Toss, then place prawns on quinoa and serve.
