Coconut Lime Chicken Nuggets with Baked Zucchini

INGREDIENTS:

  • 2 LARGE EGG WHITES

  • 1 TBSP FRESH LIME JUICE

  • 6 TBSP UNSWEETENED COCONUT FINELY SHREDDED

  • 240 G CHICKEN BREAST, BONELESS, SKINLESS

  • 1 MEDIUM ZUCCHINI

  • 1 TBSP EXTRA VIRGIN OLIVE OIL


DIRECTIONS:

  1. Line backing sheet with parchment paper

  2. In a small bowl, lightly whisk egg whites and lime juice. Place coconut in a separate bowl.

  3. Drench chicken in the egg white mixture, then roll in coconut to coat. Place the coconut coated chicken on prepared baking sheet.

  4. Line a second baking sheet with parchment paper.

  5. Cut zucchini rounded and spread Extra Virgin Olive Oil on them when lain on the backing sheet.

  6. Bake chicken and zucchini for 25-30 minutes, turning often.
