1 TBSP FRESH LIME JUICE
6 TBSP UNSWEETENED COCONUT FINELY SHREDDED
240 G CHICKEN BREAST, BONELESS, SKINLESS
1 MEDIUM ZUCCHINI
1 TBSP EXTRA VIRGIN OLIVE OIL
Line backing sheet with parchment paper
In a small bowl, lightly whisk egg whites and lime juice. Place coconut in a separate bowl.
Drench chicken in the egg white mixture, then roll in coconut to coat. Place the coconut coated chicken on prepared baking sheet.
Line a second baking sheet with parchment paper.
Cut zucchini rounded and spread Extra Virgin Olive Oil on them when lain on the backing sheet.
Bake chicken and zucchini for 25-30 minutes, turning often.
