30 GR SMOKED SALMON, THINLY SLICED
40 GR FETA CHEESE
HANDFUL OF BABY SPINACH
HANDFUL OF ROCKETS
1 TBSP OLIVE OIL EVO
Crack eggs into a bowl, add smoked salmon and crumble in the feta.
Add olive oil to a small, non-stick frying pan over a medium to high heat.
Drop-in the spinach and stir until wilted.
Pour the egg mixture into the pan and move the eggs around.
When all the egg is semi cooked, without stirring, leave to fry for a minute
When ready, slide the omelette onto a plate and top with the rocket
