Salmon Salad

I SERVING


INGREDIENTS:

  • 1 SALMON FILLET WITH SKIN ON

  • 2 TBSP PUMPKIN SEEDS

  • ½ AVOCADOS PEELED, DE-STONED AND CHOPPED

  • 40 GR FETA CHEESE

  • HANDFUL OF WATERCRESS

  • 2 TBSP OIL EVO


DIRECTIONS:

  1. Preheat oven 200°c

  2. Line a baking sheet with parchment paper and lain down the salmon fillet on it.

  3. Bake the salmon for 15 minutes.

  4. When ready, keep it aside and warm.

  5. While the salmon is cooking, mix the chopped avocado with the feta cheese and the watercress.

  6. Slide the salmon on top of it and add pumpkin seeds.

  7. Finish with extra virgin olive oil and a squeeze of lime juice.


Here you go, your pack of omega 3!
